Bean Salad (Featured at the Farmer's Market!)
This bean salad is an amazing summer treat (or all year long!). So easy to make, so healthy and flavourful. Kids love this salad and it goes great as a side dish or a light lunch with some salad.
Ingredients:
- One can of Chick Peas
- One can of Red Kidney Beans (or your favorite bean!)
- 1 TBSP of your favorite Sofrito (cooked for 3 minutes) or more! We recommend you use Sofrito with Annatto for the wonderful colour and a bit of kick
- 1/4 cup of olive oil (double if you like more dressing)
- 2 TBSP of lemon juice (double if you like more dressing)
- 2 TBSP of vinegar (you can use your favourite vinegar - double if you like more dressing)
(We used white and white wine vinegar at the market)
Salt and Pepper to taste
Instructions:
Mix and serve! If you find it doesn't have enough "dressing" double up the olive oil and vinegar portions until you get the right amount!
