Rainy Day Chili
1 can of red kidney beans
1 can of black beans
1 can of pinto beans (or any other bean you love!)
1 lb of ground beef
1 large (680ml) can of tomato sauce
1 small can of tomato paste
1 large (796ml) can of stewed tomatoes
2-3 TBSP of Chili Powder
1TBSP of Cumin
2-3 Cups of Broth (veggie, chicken or beef)
1/2 cup of Sofrito with Annatto
Optional:
- Meaty sausage like andouille gives it a wonderful flavour and texture.
- For vegetarian chili up the beans and add mushrooms (sliced big) and chopped peppers for more variety
- Add more jalapeños for spicy chili!
Directions:
- Cook sofrito in some olive oil for 3 minutes or so. Add the meat and sausage if you are adding sausage to the chili.
- Add Chili powder and Cumin
- Add the rest of the ingredients
- Bring to a boil and let simmer for at least 20 minutes. Adjust for salt and pepper (to taste)
Serve with sour cream and cheese ;)
Garnish with some cilantro or parsley
