Rainy Day Chili

Rainy Day Chili

1 can of red kidney beans
1 can of black beans
1 can of pinto beans (or any other bean you love!)
1 lb of ground beef
1 large (680ml) can of tomato sauce
1 small can of tomato paste
1 large (796ml) can of stewed tomatoes
2-3 TBSP of Chili Powder
1TBSP of Cumin
2-3 Cups of Broth (veggie, chicken or beef)
1/2 cup of Sofrito with Annatto

Optional:

  • Meaty sausage like andouille gives it a wonderful flavour and texture.
  • For vegetarian chili up the beans and add mushrooms (sliced big) and chopped peppers for more variety
  • Add more jalapeños for spicy chili!

Directions:

  1. Cook sofrito in some olive oil for 3 minutes or so. Add the meat and sausage if you are adding sausage to the chili.
  2. Add Chili powder and Cumin
  3. Add the rest of the ingredients
  4. Bring to a boil and let simmer for at least 20 minutes. Adjust for salt and pepper (to taste)

Serve with sour cream and cheese ;)

Garnish with some cilantro or parsley
