Savoury Spanish Rice (v1)
This rice is so versatile and simple to make! It can be a side dish, a main dish or can be part of a burrito :)
Ingredients:
- 2 cups parboiled rice
- 2 & 1/3 cup of water
- 2 fresh tomatoes chopped
- 2-4 TBSPS of Sofrito Clásico with Annatto
- 2 TBSP of tomato paste
- 1-2 TBSP of olive oil
- 1-2 tsp of salt (to taste)
Instructions:
- Sautee the Sofrito with the olive oil for 1-2 minutes, add the chopped fresh tomatoes. Sauté for 5 more minutes on medium.
- Add rice, tomato paste, water and salt to taste
- Bring to a boil, stir to make sure the tomato paste is dissolved within the water.
- Cover and reduce to low. Cook for 20 minutes and stir everything. Cook for another 5-10 minutes covered if rice hasn’t absorbed all the water.
Variations:
- Add some chopped chicken to Step 1 for a one pot meal
- Add some of your favourite veggies (spinach, mushrooms and tiny broccoli are great!) and chilli paste and make it spicy
- Quick Variation: If you already have rice made just sauté the sofrito for 3-5 minutes, add your rice and done!!!!
I love this rice with fish and personally I love to add chopped raw zucchini and fresh garlic
